The nitro is limited, so the actual contest isn't top speed on the straight - it's who saves their boost for the last corner instead of blowing it early to look like they're winning. Corners punish full-throttle steering hard, which means the player who lifts off the gas half a second sooner usually exits faster than the one who doesn't. Single-player mode exists too if there's no second racer around.

Why do I keep losing time in corners even though my top speed is higher?
Holding full throttle through a turn causes the car to understeer wide, which costs more time than it saves. Lifting off the accelerator slightly just before the corner and getting back on it at the apex carries more overall speed through the turn than braking late or not lifting at all.
Should I use nitro as soon as it fills up?
Using it immediately usually wastes it on a straight where you were already at top speed. Saving the boost for the final stretch or for overtaking out of the last corner tends to matter more for the finishing time than using it the second it becomes available.
